Probably you would think: What can be so special about a soup made out of fish? But let me explain in details what fish soup means to Macedonians, especially to the Ohrid people. Since is made of fish, it is a dish that is allowed in some days of the religious fest that is happening four times per year. This is a reason why it’s a well-accepted traditional plate. It is most delicious if there are fish-eggs inside.

It is served with a slice of lemon, fresh bread and ''Makalo''. ''Makalo'' is a thick paste made of garlic and oil. Some of the cooks, not the best ones, obviously, are putting mayonnaise too. This way they would shorten the process of looong 'massage' of the garlic in the ceramic pot with a special wooden tool. You can choose either to put this paste into the soup, either you can spread it on the bread and enjoy up until your blood pressure reaches zero.

This dish to an Ohrid restaurant is what espresso is to an Italian coffee store. There is a silent competition among them: who makes the ultimate fish soup? I know my favorite. Before me releasing this highly important info to you, I would like to mention one tradition related to this dish. A good party night in Ohrid is considered the one that finishes with fish soup in the not-so-early mornings.
