The vegan options

The restaurant is part of a chain – besides the one in Stara Zagora, you can find it at two locations in Sofia and one in Veliko Tarnovo. The rich menu offers something for every taste. The vegan options are marked in red, and the vegetarian ones in green. For example, there is a vegan salad with tomatoes, rucola, spelt, olives, and walnuts. For the main course, you get to choose from lentils croquettes, risotto with broccoli and spinach with vegan pesto and coconut butter, and fried eggplant with lentils. On the menu, there is a vegan pizza as well, and some different types of bread with tomatoes or spices. 

And those with a sweet tooth can choose between a vegan cake with apricots and homemade sorbet ice-cream. 

Background

The name of the restaurant is not the easiest to pronounce. Still, it bears a hidden meaning and is not chosen by chance. It literally translates to “The Happy Person” and is a pseudonym of a famous Bulgarian author, called Aleko Konstantinov. Besides being one of the most prized Bulgarian writers of all time, in the second half of the 19th century he initiated the Bulgarian tourist movement. He established the first organized tourist associations in Bulgaria and played a significant role in promoting the country`s fantastic nature, landmarks, and history.

By now, you are probably asking yourself, why is a restaurant chain named after such a person. The reason is that the chain`s philosophy is very similar to Konstantinov`s ideas. With the way they view and present the food, the Shtastlivetsa Restaurants remind their guests that the preservation of a nation`s history, nature, and traditions is among the most important things.

This restaurant's values reflect Aleko Konstantinov`s life-philosophy and are in unison with the eco-friendly lifestyle, which becomes more and more common. And even though, in Bulgaria, we just love feta cheese and eat it with almost everything, when it comes to being self-conscious, and caring about the future of the Earth, we are willing to make some sacrifices.
